Dairy-Free, Egg-Free Skillet Pasta

So easy to prepare! Dairy-Free, Egg-Free Skillet Pasta

When you have food allergies in your family, you don’t rely much on pre-packaged processed foods, like instant macaroni and cheese or Spaghetti-Os, which tend to contain allergens. Instead, you prepare your own healthier, more wholesome meals.

This pasta dinner is great for busy families. It only takes about 30 minutes to prepare and the ingredients are easy to keep on hand. It is dairy-free and you can use any ground meat…beef, turkey, chicken, or pork. For extra flavor, I use mild Italian sausage. This recipe is definitely one to add to your easy go-to meal list.

Skillet Pasta Dinner
Serves 4-6

1 pound ground meat
1 medium onion, chopped
1 T. minced garlic
1/2 jar pasta sauce (make sure it is allergen-free)
1 T. non-dairy margarine (Recommended: Earth Balance Soy-Free Vegan Buttery Spread)
2 1/2 – 3 cups low sodium broth or water (I use chicken or vegetable broth)
1/4 cup extra-virgin olive oil
2 cups uncooked rotini, macaroni or other small pasta
1 cup frozen peas, optional

Procedure:

  1. Brown ground meat and onion in 12-inch skillet; drain.
  2. Stir in pasta sauce, garlic, margarine and 2.5 cups broth or water. Bring to a boil over high heat.
  3. Add olive oil. Stir.
  4. Stir in uncooked rotini and return to a boil.
  5. Reduce heat to medium low and cook covered, stirring occasionally, 12 minutes or until rotini is tender. Add more broth or water if necessary during cooking.
  6. If desired, stir in frozen peas. Cover and cook an additional 3-5 minutes.
  7. Remove from heat. Stir.
  8. Serve with dairy-free, egg-free, nut-free bread.

Notes: For a vegan option, use soy crumbles in place of the ground meat. For a gluten-free option, use gluten-free pasta.  This is a very versatile recipe!
