Microwave Macaroni and Cheese: A Dairy-Free Pinterest Inspiration!

Pinterest continues to inspire me. For this pin, I believe the text underneath the photo said, “Stop buying instant macaroni and cheese, people!” As an allergen-free mom, I thought to myself, “Can I make this with non-dairy milk and cheese?” And more importantly, “Will Savannah like it?”

I hope the smile on her face tells you that this is a fantastic recipe, and it is super easy. Every kid deserves to have macaroni and cheese. But believe me, adults will love this, too!

Dairy-Free Microwave Macaroni and Cheese
Serves 1

1/3 cup dry small pasta
½ cup water
½ cup non-dairy shreds (I used Daiya non-dairy mozzarella-style shreds)
¼ cup non-dairy milk (I used powdered soymilk)

Procedure

  1. Put pasta and water in a small glass bowl (I used a 4-cup bowl and it did not overflow while cooking).
  2. Microwave on high for two minutes, then stir. Repeat this for at least 2 to 4 more minutes, stirring at each 2-minute interval. The water should absorb completely and the pasta will be cooked through. You may add a little more water if necessary. My pasta cooked through in 8 minutes.
  3. Remove from the microwave and stir in the non-dairy milk and shreds. Microwave for another minute.
  4. Stir the mixture thoroughly until well combined. Allow to cool slightly before eating.
